摘要
生物技术是一个富集多学科知识和技术的领域,以基因工程为核心,包括细胞工程、酶工程、发酵工程。目前该技术已在医药、食品、农业等诸多领域显示出卓越的应用成果,创造出不凡的经济效益和社会效益,并不断开拓新的应用领域,引导新的产业和体系的形成。大豆产业作为基础产业之一,在改善人类膳食营养结构方面占有举足轻重的地位,生物技术在其中发挥了相当大的推动作用,本文以酶工程和发酵工程为主线,就生物技术在大豆深加工中的应用现状及前景做阐述。
Biotechnology is a multi-disciplinary enrichment of knowledge and technology fields, genetic engineering was taken as the core, including cell engineering, enzyme engineering, fermentation engineering, the technology in medicine, food, agriculture and other fields showed excellent application results, create extraordinary economic and social benefits, and constantly developed new applications, new industries and to guide the formation system. Soybean industry as one of the basic industries, it occupies a pivotal position in improvement of human nutrition structure aspect and biotechnology has played a significant role. Application and prospect of biotechnology were discussed in the soybean further process, enzyme engineering and fermentation engineering were two main research lines.
