生物技术是一个富集多学科知识和技术的领域,以基因工程为核心,包括细胞工程、酶工程、发酵工程。目前该技术已在医药、食品、农业等诸多领域显示出卓越的应用成果,创造出不凡的经济效益和社会效益,并不断开拓新的应用领域,引导新的产业和体系的形成。大豆产业作为基础产业之一,在改善人类膳食营养结构方面占有举足轻重的地位,生物技术在其中发挥了相当大的推动作用,本文以酶工程和发酵工程为主线,就生物技术在大豆深加工中的应用现状及前景做阐述。

Application and prospect of biotechnology were discussed in the soybean further process, enzyme engineering and fermentation engineering were two main research lines.
