摘要
利用智能恒温恒湿培养箱通过控制温湿度条件,研究不同温湿度处理对烟叶陈化过程中多酚氧化酶、过氧化物酶、脂氧合酶和苯丙氨酸裂解酶活性的影响。结果表明:(1)随着陈化时间的延长,烟叶中各酶活性均呈现先上升后下降的趋势。(2)在不同温湿度条件下,陈化21个月时各酶活较陈化初始酶活降低幅度有所不同,其中多酚氧化酶活降幅最大,在中温高湿处理酶活下降82.93%。(3)在高温中湿、中温高湿和中温中湿条件下各酶活性在陈化前期上升幅度较大,在中后期下降幅度较大。(4)在整个陈化进程中,不同温湿度处理相比较,多酚氧化酶活降低幅度表现为中温高湿>中温中湿>高温中湿>低温中湿>中温低湿>对照;过氧化物酶活降幅为中温高湿>高温中湿>中温中湿>中温低湿>对照>低温中湿;脂氧合酶活降幅表现为中温中湿>高温中湿>中温高湿>中温低湿>对照>低温中湿;苯丙氨酸裂解酶降低幅度为高温中湿>中温高湿>中温中湿>中温低湿>低温中湿>对照。
The changing rules of PPO, POD, LOX and PAL activities duringflue - cured tobacco aging were studied by using aptitude -constant- temperature -and -constant- moisture -trunk to control the temperature and humidity conditions. The results indicated that: (1) each enzymatic activity went up firstly and then went down during the whole aging stage ; (2) enzymatic activities descending ranges of different treatments were different when aged 21 months, and PPO activity dropped the most, which decreased by about 82.93% in C treatment; (3) enzymatic activities of treatments E, C, B had higher increasing ranges in the early aging days, and had higher descending ranges in midanaphase; (4) in the whole aging process, by comparing the treatments with each other, the degrading ranges of PPO activity showed the order that C 〉 B 〉 E 〉 D 〉 A 〉 CK; the degrading ranges of POD activity showed the order that C 〉 E 〉 B 〉 A 〉 CK 〉 D ; the degrading ranges of LOX activity showed the order that B 〉 E 〉 C 〉 A 〉 CK 〉 D ; the degrading ranges of LOX activity showed the order that E 〉 C 〉 B 〉 A 〉 D 〉 CK.
