摘要
探讨了洋河大曲原酒贮存过程中的物理和化学变化,贮原酒用容器和贮存温度对原酒贮存过程中的影响,介绍了人工催陈的一些方法,并认为贮存不能提高原酒的档次。
Physical and chemical changes of Yanghe Daqu liquor during storage were investigated. The effects of storage container and temperature on the storage process were also discussed. A few artificial methods of aging were introduced. It was proposed that the liquor storage could not raise the grade.
