摘要 环糊精特有的结构与性质可以应用于许多领域。本文概述了环状糊精的结构、性质、以及国内外关于环糊精改性的研究进展;综述了它在食品工业与其它领域上的应用及其应用前景。 Researches in the structure, properties and the modification of cyclodextrin were reviewed in this paper. Besides, the application of cyclodextrin in food industry and the other fields were summaries and its future applications were prospected..
