摘要 [目的]为新郑大枣大田生产、深加工、营养食用药用等方面提供基础数据和科学指导。[方法]测定新郑大枣产区的土壤及大枣矿质元素含量,探讨大枣矿质元素的含量特征、对矿质元素的富集能力及矿质元素之间的关系等问题。[结果]新郑大枣K、Ca、P、Mg、Al、B、Si、Fe、Zn等元素含量较高,而Mn、Cu、Se等含量较低;对P、B、Zn、K、Cu等元素的富集吸收能力较强;元素之间关系较复杂,但基本呈现生物化学性质相近的元素之间相关系数较大的规律特征。[结论]新郑大枣含有多种对人体有益的微量元素,营养价值高。 [Objective]The experiment was carried out to provide basic date and scientific guidance for field production,deep processing,nutritional,edible and officinal values of Xinzheng jujube. [ Method] Mineral elements contents of jujube and soil in Xinzheng jujube producing area were determined to study content characteristics, accumulation ability and relationship of mineral elements. [ Result ] The contents of K, Ca, P, Mg, AI, B, Si, Fe and Zn were higher in Xinzheng jujube,while Mn,Cu,Se were lower.The accumulation abilities of P,B,Zn,K and Cu were strong.The relationship among mineral dements was complicated, but the correlation coefficient of similar biochemical property ones was high. [ Conclusion] The nutritive value of Xinzheng jujube is high for its containing various mineral elements which are beneficial to human health.
