阐述了酿造食醋的消炎抗菌、缓解心血管疾病、抗肿瘤等医疗保健功效,综述了酿造醋在醋浸食品如醋浸蛋、醋浸豆、醋浸花生等中华传统的保健食品的应用以及醋浸过程中各有效成分变化,展望了酿造食醋和醋浸保健食品广泛的应用前景。
This review examines the fermented vinegar is playing important roles in medicinal, roles as anti-infective agent, anti-cardiovascular risk and anti-tumor agents. It reports the investigations supporting fermented vinegar use for producing traditional Chinese health food and the change their components, such as vinegar treatment egg, soybean and peanut. It also reports the great prospect for fermented vinegar in health property and vinegar treatment food.
