摘要
利用同位素比值质谱仪测定了来自北京、山东、湖南、广东4省9个不同地区鸡肉粗蛋白中的1δ3C、1δ5N、3δ4S、2δH值和相应各地饮水中的1δ8O值。多元方差分析结果表明,1δ3C、1δ5N、3δ4S、2δH 4种稳定同位素在不同地区的鸡肉中均有显著差异(p<0.05);4参数同时对鸡肉产地的正确判别率达到了100%;各地饮水中的1δ8O值和鸡肉中的2δH值呈现显著正相关性(p<0.01)。碳、氮同位素受饲料、气候等因素的影响,硫同位素依赖于地理位置和产地表面的地质特点。
The values of δ^13C, δ^15N,δ^34S and δ^2H of chicken crude protein collected from nine regions distributed in Beijing, Shandong, Hunan and Guangdong and the value of δ^18O of feeding water of the corresponding regions were determined by isotope ratio mass spectrometry. The results of multivariate analysis of variance showed that the values of δ^13C, δ^15N, δ^34S and δ^2H of chicken crude protein of different regions were significantly different(p 〈 0.05 ) and that the δ^18O values of the feeding water of each region were positively correlated significantly with the δ^2H values in chicken crude protein(p 〈 0. 01 ) . Based on the values of δ^13C, δ^15N, δ^34S and δ^2H, the correct rate of the discriminant analysis was up to 100%. The results also showed that carbon and nitrogen isotope ratios were influenced by the feeding and climate and that sulfur isotope ratios were influenced by geographical location and features of producing regions.
