Cafeterias Sanitation of Rural Boarding Schools of Anhui Province

目的了解安徽省农村寄宿制学校食堂卫生现状,为制定适合安徽省农村寄宿制学校的食堂卫生管理措施提供依据。方法在安徽省东西南北中5个地区,分别选取全椒县、岳西县、绩溪县、濉溪县及长丰县共25所农村寄宿制学校食堂主管领导进行访谈并进行现场观察与卫生学测评,内容包括学校食堂存在的问题及原因。结果食堂卫生总体情况、食堂布局和卫生设施、食品生产和储存过程、从业人员卫生行为和原料采购、卫生管理等方面都难以达到国家相关规定。结论安徽省农村寄宿制学校食堂卫生普遍存在问题,相关部门应加强监督和管理力度,保障农村寄宿制学校食品安全。

Objective To master the problems of boarding school cafeteria sanitation in rural areas of Anhui,and to provide evidence for government to develop health management policy.Methods Five counties including Quanjiao,Yuexi,Jixi,Suixi and Changfeng were selected from east,west,nouth,north and midland of Anhui province respectively.Then 25 boarding schools in rural areas were chosen from the five counties,in-depth interview and observation were carried out among the principals of cafeterias.The investigation was conducted including sanitary problems of cafeteria and their reasons.Results The conditions of school health,the arrangement of cafeteria,sanitary equipment,food handling and preservation,health practice of employees and health management did not reach the government standard.Conclusion Problems of cafeterias sanitation of rural boarding schools are common existent,related departments should strengthen the supervision and management in order to insure the school cafeteria security.
