摘要
肉品质已成为目前动物营养学研究的热点,很多因素(基因、饲料、运输及屠宰等)都能影响肉品质。作者仅就常见微量矿物元素铬、锰、硒、铁对肉品质的影响、作用机理等方面的研究进展进行了综述。
Meat quality has become research focus in animal science and was affected by various factors including gene, feed, transport, slaughter and so on. This review concerning the effects of chromium, manganese, selenium and iron on meat quality.
