玉米肽的醒酒活性体外试验及其醒酒机理研究 被引量:40

摘要 为研究玉米肽的醒酒机理,找到筛选高醒酒活性玉米肽的便捷的体外试验方法,考察了在体外试验中,玉米肽对乙醇脱氢酶(ADH)活力的影响及对羟基自由基(.OH)的清除作用,并与动物试验比较,结果显示三种方法基本吻合。玉米肽在体外试验中可激活ADH,具有良好地抑制.OH的能力,玉米肽中含有较高比例的丙氨酸、亮氨酸,尤其是亮氨酸。结论:可以通过测定玉米肽对ADH的激活率及对.OH的抑制率这两个体外试验,从不同蛋白酶酶解玉米肽及不同水解度的玉米肽中筛选出高醒酒活性肽。玉米肽的醒酒作用机制与其能激活ADH、清除.OH及其较高比例的丙氨酸、亮氨酸组成有关。 The mechanism for corn peptides facilitating alcohol metabolism was studied and tests in vitro were carried out. Two tests in vitro and a test in vivo were compared. The results of the three tests presented in this paper are almost consistent. Corn peptides can activate alcohol dehydrogenase (ADH) and scavenge hydroxyl radical (· OH) according to the in vitro tests, and there are high content alanine and leucine in corn peptides, especially leucine. It is indicated that to select potent corn peptides facilitating alcohol metabolism, the activating ADH test in vitro and scavenging · OH test in vitro are useful. The mechanism of corn peptides facilitating alcohol metabolism is relative with their amino acid composition and their ability of activating ADH and scavenging· OH.
