玉米大豆复合ACE抑制肽风味控制研究 被引量:5

摘要 为了制备具有较高降血压活性及风味良好的玉米大豆复合肽,采用正交试验、血管紧张素转化酶(ACE)抑制活性试验,比较了阴、阳离子交换树脂和大孔树脂的脱盐效果及其对复合肽ACE抑制活性的影响;比较了风味酶法和β-环糊精掩盖法的脱苦效果。结果表明:大孔树脂用于复合肽的脱盐,无论是脱盐效果、氮回收率,还是对复配肽的ACE活性保持,均优于离子交换树脂脱盐法。风味酶法脱苦不仅可使苦味大大降低、无氮损失,同时还保持较高的ACE抑制活性;将浓度为2%的β-环状糊精添加到5%的复合肽水解液中,可使苦味基本去除,也不造成氮损失。结论:生产高降血压活性玉米大豆复合肽,宜采用大孔树脂脱盐,风味酶法或β-环糊精掩盖法脱苦。 The aim of this work is to prepare the mixture of com and soybean peptides with high antihypertensive activity and good flavor. An orthogonal designed experiment and a test in vitro were introduced to detenuine angiotension- Ⅰ- converting enzyme (ACE) inhibitory rate. Two desalting methods and their inhibiting effect on ACE were compared. One of them was treating with cation and anion exchange resin; another was treating with DA201 - C resin. Debittering of the mixture peptides with flavourzyme or β- cyclodextrin was investigated. Results show as follows: The DA201 - C resin treatment is a better desalting method, all of its nitrogen recovery rate, ACE inhibitory rate and desalting rate are higher than those of the ion exchange resin. Debittering with flavourzyme is obviously effective without ACE inhibitory activity decrease and nitrogen loss. Adding 2 % β- cyclodextrin solution in 5 % com and soybean peptides solution also leads bitterness almost disappeared without nitrogen loss. It is concluded that in producing corn and soybean peptides with high antihypertensire activity, DA201 - C resin treatment is the better method for desalting, and flavourzyme or β - cyclodextrin could be used for debittering.
