摘要
植物甾醇(PS)具有降低血液胆固醇的功能,但水相、油相中较低的溶解度一直是限制其应用的瓶颈。本文尝试以β-环糊精(β-CD)包合植物甾醇以改善其水溶性。DSC结果显示β-CD包合PS确实可行。以正丁醇为溶剂,PS浓度2%,β-CD与PS的摩尔比为4∶1,温度为40℃,中等速度搅拌条件下包合12 h,PS包合率可达90%,PS的水溶性得到明显改善。
Phytosterol has been shown the function to reduce the level of serum low - density lipoprotein cholesterol in human body, but its low solubility in water and fat restricts its application. In this study, β - cyclodextrin was used to improve the water - solubility of phytosterol. The result of DSC shows the inclusion complex of phytosterol in β - cyclodextrin can be formed, and the phytosterol inclusion rate of 90 % can be reached when the reaction is carried out at the following optimized reaction conditions: phytosterol concentration 2%, molar ratio of β - cyclodextrin to phytosterol 4: 1, temperature 40 ℃, reacting with moderate stir for 12h in n - butanol system. The water - solubility of the phytosteml is improved significantly.
