摘要 为了寻求一种既简易可行又能同时保证核桃蛋白质量的核桃油提取方法,分析了水剂法提取核桃油的工艺,探讨了搅油温度、搅油时间、磨浆料水比、离心转速对出油率的影响。通过单因素和正交优化试验确定最佳工艺条件为搅油温度25℃,搅油时间4 h,磨浆料水比1∶3,离心转速4 800 r/m in,其出油率可达72.00%。核桃油品质良好。 For seeking a process for walnut oil extraction, simple, practical and non - influence to walnut protein quality, an aqueous process was studied. The effects of stirring temperature, stirring time, ratio of material to water, and centrifugal rotate speed on walnut oil yield were explored. Based on single - factor and orthogonalized experiments, the obtained optimum conditions are stirring temperature 25 ℃, stirring time 4 h, ratio of material/water 1 : 3, and centrifugal rotate speed 4 800 r/min. At this condition the oil extraction rate is 72.00%. The produced walnut oil quality is good.
