摘要
研究超临界萃取VE对自由基.OH和O2.-的抑制作用,以及通过在常温和60℃下测定植物油中酸价、TBA值和VE含量的变化情况,从而对其抗油脂氧化作用进行研究。结果表明。超临界萃取VE对自由基抑制和油脂抗氧化有较好的效果,但效果随自由基和油脂种类等不同而有差异。
The inhibiting effects of VE extracted by supercritical fluid on free radicals were studied; firthermore the effects of the VE on acid value and thiobarbituric acid value in vegetable oils under different temperature were investigated. Results indicate that the VE extracted by supercritical fluid has good effects on inhibiting free radicals and on enhancing antioxidation in vegetable oils. The effects are different with different free radical and different oil.
