摘要
目前,烹饪类学校开设厨师职业道德教育课程相当重要。根据厨师职业道德的基本构成和内涵,从学生个人的全面发展、学校的教育功能和当今餐饮行业的需要等方面说明了开课的必要性,并在此基础上进一步提出了编写教材、培养师资、遴选教法、提高学生文化素质等环节以确保开课质量的具体措施。
Professional ethics courses for cuisine majors are of great importance, which are supposed to meet the requirements in students' personal development, the realization of school educational functions and the development of catering industries. To ensure high quality course, specific measures are proposed in teaching material compiling, teachers training, choice of teaching methods and the students' comprehensive cultural cultivation.
