绿粒小麦麸皮色素的酸化乙醇法提取技术研究 被引量:4

摘要 以绿粒小麦麸皮为原料进行色素的酸化乙醇法提取。结果表明,绿粒小麦麸皮色素在530nm处有最大吸收,当pH=1.0,酸化乙醇体积分数40%,料液比(g:mL)1∶15,提取温度60℃,提取1h时提取率高,色素得率为15.1%。 The colored wheat-bran has a great deal of anthocyanin that has already been confirmed to have various health care functions. The optimal conditions for extracting pigment from green wheat bran with acidified alcohol were studied. It showed that the pigment had the higher yield at the wave-length of 530nm under following condition: extracting solution concentration 40~, pH 1.0, solid-to-liquid ratio 1 : 15, extraction temperature 60℃, extraction time 1. 0h. The yield was 15.1%.
