不同产地高粱的原花青素含量测定及其抗氧化活性分析 被引量:10

摘要 采用铁盐催化比色法和DPPH分光光度法,分别对150余种不同产地高粱样品的总原花青素含量和抗氧化活性进行了测定。结果表明,不同产地的高粱样品中总原花青素含量差异较大,以云贵川三省比较高,含量从1.06%到4.00%;以新疆、内蒙二省比较低,含量从0.02%到1.25%,反映了地域因素的影响。同一省份的样品,其总原花青素含量既有比较高的,也有比较低的,反映了种质上的差异,与地理位置不呈明显的相关性。各样品对DPPH的抑制率范围为84.19%-98.23%,说明高粱具有比较高的抗氧化活性。本文为高粱选种育种、筛选深加工原料提供了实验依据。 The pro-anthocyanidins concentration and antioxidant activity of sorghum from 150 regions were determined using Ferric ions colorimetry and DPPH spectrophotometry. It was showed that there were great differences in the pro-anthocyanidins concentration among different areas. The pro-anthocyanidins contents of sorghum produced in Yunnan,Guizhou and Sichuan Province were from 1.06% to 4.00% ,which was higher than those of Xinjiang and Neimenggu Province (0.02% to 1.25%). And the pro-anthocyanridins content in the sorghum produced in same province varied due to difference variety. The clearance rate of DPPH by sorghum pro -anthocyanidins were from 84.19% to 98.23%, which showed a high antioxidant activity. The study provided accordance of sorghum variety selection for deep processing.
