摘要
将蚂蚁的主要营养成分与几种普通动物性食品的营养成分进行比较,结果显示,蚂蚁不仅营养丰富,而且是一种高营养食品资源,不但可以补充人体蛋白质、维生素、微量元素的摄入不足,而且还具有滋补强身作用和营养保健功能。以蚂蚁为原料,研究开发出焙烤制品、饮品、调味料、酸奶、蛋白粉、甲壳素、壳聚糖等一系列食品,具有较高的开发利用价值。
The nutrition value of pupae of ants and its exploitation were discussed. It is mainly reviewed on four aspects.the contents and characteristics of protein,fat and chitin of ants ;extracting and processing technology of the protein,fat acids and chitin from silk worm pupae;the relative exploitation of ants,as a source for nutritional foods and feeds and its exploitation and utilization for series food.
