摘要 细菌素是一类由细菌在代谢过程中产生的具有抑菌作用的多肽或蛋白质。文中论述了细菌素的类型、提取方法及在肉食品工业、奶制品工业、酿酒业、蔬菜加工和食品防腐保藏中的应用进展。 Bacteriocin, which has bacteriostatic action, is a kind of peptide or protein that is produced during the metabolism of bacteria. The current research of bacteriocin types, extraction methods and its applications in the food preservation, like in meat food industry, milk products industry, liquor industry and vegetable processing, are discussed in this paper.
