海南的菜肴,有鲜、活、清三大特点,白切、白灼;清蒸、清炒;以及炖、焖、煲等,突出原汁原味的烹调技法,形成了海南菜肴的特色。本文论述海南饮食旅游文化时,涉及海南四大名菜、地方风味、特色小吃。
Hainan dishes is peculiar for freshness, liveness and mildness and its cooking methods , like slicing, cauterizing, steaming, frying, stewing, boiling and heating, etc. all focuses on the original flavor of the dishes.
