摘要
将浓香型白酒传统酿造工艺与"枝江大曲"生产工艺相结合,研究总结了浓香型白酒酿造过程中的工艺要点,概括为"料、曲、酿、窖、藏"五个字,对实际生产具有指导意义。
Based on the combination of traditional Luzhou-flavor liquor production techniques and the production techniques of Zhijiang Daqu Liquor, the technical points in the production of Zhijiang Daqu Liquor were studied and further summarized. Such technical points could be summarized as "materials, starter, fermentation, pits, and storage", which could be used to guide practical production.
