蚕豆衣保健茶的微波生产工艺研究 被引量:3

摘要 对蚕豆衣保健茶的微波生产工艺进行了研究,确定了生产工艺路线和工艺参数;并对蚕豆衣保健茶产品进行了成分分析、感官评定和经济效益分析。研究结果表明:480W,120s的微波杀青工艺,蚕豆衣失水率理想,有利于进一步揉捻和干燥;杀青蚕豆衣绿色、清香、品质好。微波功率和作用时间对蚕豆衣保健茶品质具有显著影响,蚕豆衣大小对蚕豆衣保健茶品质的影响不显著;A2B2C3(480W、300s、0.25倍)为最佳组合。蚕豆衣保健茶富含维生素和氨基酸等成分,每生产1kg蚕豆衣保健茶可获利18.9元。 The micro-wave crafts of broadbean seed capsule healthy tea were researched and the parameter of production craft and craft course were confirmed. The quality of broadbean seed capsule healthy tea, component and economic benefit were also analysis. The result showed that the dehydrate rate of broadbean seed capsule was perfect if we adopts the craft of micro-wave 480W, duration time 120s. The wrap broadbean seed capsule was green, faint scent and high quality. The effects of power of micro-wave and duration time on the quality of broadbean seed capsule healthy tea were visible, but the effects of the size of broadbean seed capsule on pumpkin-slice was invisible. A2B2C3 (480W,300s,0.25 times)was the best combination. The broadbean seed capsule healthy tea contains some element, such as vitamin and amino acid. We can gain 18.9 Yuan if we produce 1 kg broadbean seed capsule healthy tea.
