摘要
本文介绍了辣椒碱类物质的化学组成、结构特性和代谢途径,并对辣椒碱类物质的鉴定、定性定量分析方法等方面进行了综述,在此基础上对辣椒碱类物质的研究方向进行了展望。
The chemical composition, structure characteristic and metabolic pathway of capsaicinoids are introduced in this article. We summarize the identity, qualitative and quantitative anlaysis of capsaicinoids. Furthermore the prospect of direction in eapsacinoids research is given.
