摘要
以婺源绿茶为主要原料,取汁后使用酵母轻度发酵〔1〕,产生二氧化碳气体,排除了氧对茶饮料成份的氧化,气泡洁白细腻,清澈透明,清凉爽口,具有明显的茶香和醇香,且质量稳定。
This is a study of a tea drink mainly based on Wuyuan green tea.The proce ing is:extracting its jwice,fermenting slightly,and producing the gas of carbon dioxide.Without the oxidizing to the tea,its quality will be stable.With this method of processing,the tes's bubbles are clean and white,fine and smooth,clear and transparent,cold and tasty,with obvious sweetsmelling of tea and fermented odour.
