摘要
为研究发酵酸法提取苜蓿叶蛋白的效果,试验在体积比(发酵酸体积/滤液体积)、混合液静置时间和发酵酸循环使用次数三因素不同水平上研究了对苜蓿叶蛋白提取率的影响,并对提取工艺进行优化。试验结果表明:各因素对提取率影响顺序为发酵酸循环使用次数>体积比>混合液静置时间,最佳工艺为体积比2:1,发酵酸循环使用1次,沉淀10min。
In order to study the effectiveness of separating alfalfa leaf protein with fermentative acid, the extraction rate (volume of fermentative acid/ volume of filtrate), the deposited time of the mixture and the circle times of fermentative acid were optimized. The results showed that the influence order of different factors on extraction was: the circle times of fermentative acid 〉 volume ratio〉deposited time. The optimum technique was the volume ratio of 2:1, recycling 1 time of fermentation acid and precipitation with 10 minutes.
