摘要
对苏鲁豫皖派、川派和北方派浓香型代表白酒的主要色谱骨架成分进行对比分析研究。结果表明,3个地域的浓香型白酒,其香味成分含量与比值各有差异。不同的含量及其量比关系,使得3个地域的浓香型白酒在风格上各有特点,苏鲁豫皖白酒突出香气优雅飘逸、绵甜柔和、醇和协调、爽净;川派浓香型白酒窖香浓郁、绵甜甘洌、丰满醇厚、香味协调、余味悠长;北方河套王酒窖香幽雅、绵甜爽净、香味谐调、酒体丰满、后味长、风格独特。
After thousands of years of development, Luzhou-flavor liquor has finally formed “Jianghuai” Luzhou-flavor liquor, “Sichuan” Luzhou-flavor liquor, and Northern China Luzhou-flavor liquor (Hetaowang as the representative). Through the analysis of the chromatographic framing compositions of the three types of Luzhou-flavor liquor, it was found that their flavoring compositions content and proportion were different, which made them with different characteristics in liquor styles. “Jianghuai” Luzhou-flavor liquor has elegant aroma and clean and harmonious taste. “Sichuan” Luzhou-flavor liquor has strong aroma and mellow taste and long aftertaste. “Hetaowang” liquor has soft taste and long aftertaste with special liquor styles.
