桃渣可溶性膳食纤维组成及生理活性 被引量:11

摘要 研究了以桃渣为原料采用水提法制备的可溶性膳食纤维和以水提后剩余滤渣为原料采用加酶辅助法制备的可溶性膳食纤维的生理活性,并对2种可溶性膳食纤维的组成进行了分析。结果显示:2种可溶性膳食纤维均能有效吸附胆固醇和胆酸钠,并对长双歧杆菌的增殖具有明显的促进作用。水提法制备的可溶性膳食纤维的组成主要包括果胶、半纤维素和葡聚糖。加酶辅助法制备的可溶性膳食纤维仅含有葡聚糖。 In this essay biological activity and composition of soluble dietary fiber (SDF) was studied. The SDF was prepared from peach pomace by two ways, one was water-extracted and another one was that the remains of water-extracted were treated by the enzyme solution. The results showed that both of the SDF could adsorb cholesterol and sodium cholate effectively, as well as promote the proliferation of Bifidobacterium longum obviously. SDF prepared by water-extracted was mainly composed of pectin, hemicellulose and dextran. SDF prepared by enzyme--treated contained dextran only.
