摘要
目的筛选水溶性番茄膳食纤维(SDC)颗粒剂的处方。方法以成型率、吸湿率为指标筛选SDC颗粒剂的辅料。结果辅料以麦芽糊精:乳糖:木糖醇(矫味剂)=4∶1∶3混合,SDC:混合辅料=1∶3较合适。结论经筛选后处方制备的颗粒成型率较高、吸湿率较低,口感较好。
Objective To screen the best formulation composition of tomato SDC grains. Methods Using the shaping rate and hygroscopicity of the adjuvants as indexes to choose the optimum prescription of SDC grains. Results The proportion of maltodextrin, lactose and xylitol(correctant) was confirmed as 4 : 1 : 3, and it's suitable for SDC with the mixture adjuvant mixed in ratio of 1 : 3. Conclusion The grains that prepared by the optimum formulation were of better ratio of briquetting, lower moisture absorption rate and good taste.
