摘要 对3种武夷岩茶和1种绿茶的18项主要营养成分进行了分析,结果为总氮:28~37mg/g;游离氨基酸:42~50mg/g;总糖:420~498mg/g;还原糖:232~298mg/g;茶多糖:182~246mg/g;茶多酚:92~158mg/g;茶咖啡碱:17~48mg/g;类脂类:19~34mg/g;钙:3.6~4.6mg/g;总磷:2.2~3.7mg/g;镁:1.7~2.2mg/g;锰:0.45~1.24mg/g;铁:0.19~0.66mg/g;锌:30~60μg/g;铜:14~20μg/g;镍:痕量,硒:12~19μg/g;Vc:0.46~0.5mg/g和1.4~2.0mg/g(鲜茶叶)。 18 main nutritive constituents were determinated in 3 Wuyi rock tea and green tea. The results were shown as follows :the content of total nitrogen is 28-37mg/g,free amino acid is 42-50mg/g,total sugar is 420-498mg/g,reducible sugar is 232 - 298mg/g, Tea - polysaccharide is 182 - 246mg/g, Tea - polyphenls is 92 - 158mg/g, caffeine is 17 - 48mg/g, similar lipids is 19-34 mg/g,calcium is 3.6-4.6mg/g,total phosphorus is 2.2- 3.7mg/g,magnesium is 1.7- 2.2mg/g,manganese is 0. 45- 1.24 mg/g,iron is 0. 19-0.66 mg/g,zins is 30-60μg/g,copper is 14-20μg,nickel is least,selenium is 12-19μg/g,Vc is 0. 46-0. 5 mg/g and 1.4-2.0mg/g(fresh tea)
