摘要
采用国际通用的评价方法,研究了培养料中亚硒酸钠不同添加浓度对猪肚菇子实体蛋白质营养水平的影响,以期为猪肚菇栽培技术的完善提供科学理论依据。研究结果表明,使用亚硒酸钠添加浓度30 mg·kg-1培养料栽培猪肚菇,其子实体蛋白质营养价值较其他供试浓度处理的高,6项评价指标中3项(氨基酸评分97.99、必需氨基酸指数98.32和生物价95.63)居首位;化学评分73.13和营养指数25.09均居第3位;氨基酸比值系数分80.90居第5位。
Protein from Panus giganteus fruit bodies cultivated using composts supplemented with different concentrations of sodium selenite was assessed in terms of six nutritional quality indices - Amino Acid Score (AAS), Chemical Score (CS), Essential Amino Acid Index (EAAI), Biological Value (BV), Nutritional Index (NI) and Amino Acid Ratio Coefficient Score (AARCS). Protein from fruit bodies cultivated on composts supplemented with 30 mg·kg^-1 sodium selenite was of superior nutritional value and ranked highest in the case of three protein quality indices (AAS, EAAI and BV), third for the CS and NI indices, and had the fifth-ranked AARCS value.
