摘要
[目的]合理开发利用野山杏资源。[方法]以碱溶液用量、碱处理温度、碱处理时间为影响因素,在单因素试验的基础上进行正交试验,研究野山杏果肉中水不溶性膳食纤维的最佳提取工艺。[结果]当碱溶液用量为10 ml/g果肉时,膳食纤维纯度的增幅减小并保持稳定。当碱处理温度为30℃时,膳食纤维的含量最高。当碱处理时间为60 min时,膳食纤维的含量最高。3种因素对膳食纤维含量的影响由大到小依次为:碱处理温度>碱溶液用量>碱处理时间。[结论]野山杏果肉中水不溶性膳食纤维的最佳提取工艺为:碱溶液用量11 ml/g果肉,碱处理温度30℃,碱处理时间60 min,获得的膳食纤维的纯度为82.60%,持水性为1 429%,溶胀性为8 ml/g。
[ Objective] The study was to rationally exploit and use the wild apricot resources. [ Method] With alkaline solution amount, alkali treatment temperature and alkali treatment time as effect factors, on the basis of single factor test the orthogonal test was taken to study the optimum extraction technology of water-insoluble dietary fiber from wild apricot flesh. [Result] When the alkaline solution amount was 10 ml/g flesh, the increase amplitude of dietary fiber purity would decrease and keep stable. When the alkali treatment temperature was 30℃, the content of dietary fiber was the highest. When the alkali treatment time was 60 min, the content of dietary fiber was the highest. The effects of 3 factors on dietary fiber content in order was alkali treatrnent temperature 〉 alkaline solution amount 〉 alkali treatment time. [ Conclusion] The optimum extraction technology of water-insoluble dietary fiber from wild apricot flesh was alkaline solution amount of 11 ml/g flesh, alkali treatment temperature of 30℃, alkali treatment time of 60 rain, by which the purity of obtained dietary fiber was 82.60%, holding water capacity was 1429% and swelling property was 8 ml/g.
