摘要
选用我国黄淮麦区141份主要小麦品种(系),探讨了它们的多酚氧化酶(PPO)遗传变异及其他主要品质的相关分析。结果表明:我国黄淮小麦品种PPO活性表现出较大的变异,变异范围为:4.75-133.5,变异系数为:71.6%。PPO活性与面粉的膨胀势、回生值呈显著负相关,与面粉色泽主要指标相关均不显著。
In this paper, 141 varieties of wheat from Yellow and Huai valleys were used to study the genetic variation of polyphenol oxidase (PPO)and their relative quality. The results showed that significant variation was observed in flour PPO activity of wheat from the Yellow and Huai valleys, ranging from 4.75 u/g rain to 133.5 u/g min and coefficient of variation was 71.6%. The correlations of PPO activity with other flour quality such as flour swelling power and retrogradation were negative significantly, but not prominent with flour colour indexes.
