摘要
乌饭树叶提取物是从乌饭树的叶子中提取而成,因其富含植物多酚类物质,从而表现出很强的抑酶性和抑菌性,是一种非常理想的天然食品防腐剂,并且自唐代以来,中国民间就一直将其作为米饭和糕点的防腐剂来使用。近年来,研究乌饭树叶提取物的学者和专家越来越多,以新昌制药厂为首的很多企业也开始参与这场开发的热潮中。本文综述了乌饭树叶提取物的防腐功能、制备方法及应用方面的研究进展,希望能为这种天然的食品防腐剂的工业化发展提供参考。
Due to large amount of plant polyphenol, the Vaccinium Bracteatum Thune leaves extracts exhibit strong inhibition on enzymes and bacteria. Thus, it can serve as a kind of exploitable natural preservatives. It was used on rice and other rice cake from Tang Dynasty. Xinchang Pharmaceutical Factory and other co-operations began to participate in the study of this new preservative. The preservative function, preparation and application are reviewed; trends in this area are also emphasized in this paper.
