摘要
美拉德反应产物(MRPs)的抗氧化功能直到20世纪80年代才受到重视,研究表明其抗氧化性能良好,有些组分的抗氧化效果可以与目前常用的抗氧化剂相比,显示出良好的应用前景,综述了美拉德反应的机理和MRPs的抗氧化功能。
Only until the 80s of 20th century, the anti-oxidation function of Maillard reaction products (MRPs) was paid more attention. Re- search showed that its anti-oxidation function was good. And some of the anti-oxidation effects of components were equivalent to antioxidants often used at present, which showed good reaction prospect.
