摘要
[目的]研究壳聚糖对番茄果实藏期品质的影响,旨在为番茄果实采后贮藏提供理论依据。[方法]以番茄为试材,采用浓度0.5%、1.0%、1.5%、2.0%壳聚糖(CTS)溶液浸泡1min,在室温(10-15℃)下贮藏20d,每5d测定1次各项生理指标。[结果]结果表明:与清水处理相比,浓度1.0%和1.5%CTS处理明显降低果实的失重率和腐烂率,延缓果实贮藏后期可溶性固形物、可滴定酸含量的降低,增加Vc的含量。[结论]适合的ETS浓度可以保持果实较好的硬度,提高番茄果实贮藏品质。
[Objective ] The research aimed to study the effects of chitosan coating on quality of stored tomato fruits and provide scientific ref- erences for the postharvest storage. [Method] Harvested tomato fruits were immersed in 0.5% , 1.0% , 1.5% and 2.0% CTS solutions for 1 minute, then were stored at 10-15 ℃ for twenty days. Each physiological index was measured every 5 days. [ Result] The results showed that, comparing to the control, 1.0% and 1.5% CTS treatment could reduce the weight loss rate and the rotten rate of fruits, maintain higher TSS content, titratable acid content and Vc content of fruits in the late storage period. [ Conclusion ] Suitable CTS solutions could keep good firmness of fruits, and prolong the storage period of fruits.
