摘要
通过在各类苹果汁中接种酵母菌,比较其生长曲线,探索鉴别不同类型的苹果汁的方法。试验结果表明:该方法对不同原果汁含量的苹果汁有良好的判别效果,可实现对原果汁含量的初步定量;对添加糖和酸以调整可溶性固形物及总酸含量类的掺伪果汁具有良好的判别效果。
The possibility of authenticating various apple juice by comparing the growth crave of yeast was explored in this study. Data showed that different content of raw apple juice could be distinguished and quantitative. Adulteration juice with exterior sugar and acid for adjusting content of soluble solid and total acid could be discriminated commendably.
