摘要 综述了肌原纤维的特性及其在鱼肉制品加工中的应用。介绍了肌原纤维的结构组成、鱼肉制品加工过程中肌原纤维的变化?以及肌原纤维蛋白改性技术的应用。 This paper summarizes the properties of myofibril and its application in fish products. It introduces the structure of myofibril, the change of myofibril in the producing process of fish products and the application of denaturalization technique in myofibril protein.
