摘要
本文分别建立了已冻结区、未冻结区和过渡界面的热传递偏微分方程。采用有限差分法获得了果蔬内部各层在冻结过程中温度变化的模拟模型。以苹果汁、单体苹果为例进行计算和实测比较,表明模拟方法可信可行。最后分析了冻结中各层温度及其梯度变化、界面迁移过程和表内层的通过冰晶生长时间快慢等。
A finite calculus formulation is used to obtain numerical solutions to the simutaneous heat equationins describing temperation in frozen zone,unfrozen zones and freezing interface layer during freezing process of vegetable and fruit.In which the heat conductivity and the specific heat were taken different values in frozen and in unfrozen zones .The model is used to solve the problem of freezing of apple samples.The predicted curves agree with experimental results.This technique has great potential for applications in explaining the complicated heat transfer problem during freezing.
