富马毒素检测和控制研究进展

摘要 富马毒素是20世纪80年代末发现一类由串珠镰刀菌产生真菌毒素,广泛存在于与人、动物相关粮食食品中,对人类食用安全造成极大危害,因此对富马毒素研究越来越受关注。该文综述目前国内外检测富马毒素一般方法及各自优缺性,介绍一些减少富马毒素污染途径,为今后对富马毒素检测和控制提供一定理论依据。 Fumonisin is one kind of mycotoxin produced by Fusarium moniliforrnn which is found in late-1980s. It widely exists in food which is related closely to human and animal and do great harm to the human salty, so it draws more and more attention. In this paper, some detected methods of Fumon- isin were introduced, as well as the advantages and disadvantages of those methods. Furthermore, some ways to reduce Fumonisin contamination was showed. So the article provided some theories for detecting and controlling the Fumonisin.
