摘要
采用Alcalase碱性蛋白酶水解银杏果蛋白,对水解产物进行超滤获得小分子量的银杏肽。通过质谱法确定了银杏肽分子量范围。银杏肽在邻苯三酚、亚油酸、Fenton3种检测系统均可表现不同程度的抗氧化能力。浓度为20mg/mL时,对邻苯三酚自氧化抑制率可达到80%,有明显地清除超氧阴离子的作用;浓度为2mg/mL时,对羟基自由基的清除作用达到48.63%,有较强的清除羟基自由基的作用;浓度为10mg/mL,具有一定的抑制脂质过氧化的作用,可以作为一种广泛的抗氧化剂。
Ginkgo peptides(GP) were prepared by Alcalase hydrolysis and ultrafihration, the MW of GP was definited by Mass spectrum. When GP was 20 mg/L, the antioxidant of GP was studied in Fenton system and pyrogallic acid system and linoleic acid system. The inhibition ratio to pyrogallic acid autoxidation reached to 80 %, having a strong ability to scavage superoxide anion; when GP was 2 mg/L, the clearance rate to hydroxyl radical was 48.63 %;the GP also can inhibit the degree of lipid peroxidation when concentration was 10 mg/L;it was regarded as one kind of extensive antioxidant.
