摘要
卡拉库尔羊、多浪羊和田羊与柯尔克孜羊是新疆南疆地区著名的地方品种羊,其具有肉质鲜美、风味独特、营养丰富之特点,为详细了解这4种羊肉的常规营养成分含量情况,运用食品成分常规分析方法分别对其肉中水分、粗蛋白、粗脂肪和总灰分含量进行全面测定分析,并与相关参考标准进行比较研究,研究发现:这4种羊肉具有水分含量适中、蛋白质含量丰富、脂肪含量较高,矿物质含量丰富等特点。
These four kinds of sheep, KalaCour sheep, Duolang sheep, Hetian sheep and Keerkezi sheep, are the famous local breed sheep in the south region of Xinjiang. The kind of mutton is rich in nutrition. It has a unique flavor and the quality of the mutton is fresh and delicious. In order to get a detailed understanding of the content of the routine nutritional ingredient of the four kinds of mutton, to used the routine analysis method of food ingredient to determine and analyze the contents of water, thick protein, thick fat and total ashes in it. And then we made comparative study with related reference criteria. To shows these four kinds of mutton have such features: the content of water is appropriate, they are rich in protein and minerals and the content of fat is rather high.
