摘要
玉米油脂中含有丰富的不饱和脂肪酸,其中主要为亚油酸和油酸。亚油酸可以经过亚油酸异构酶作用转变为功能性物质-共轭亚油酸(Conjugated Linoleic Acid,CLA)。共轭亚油酸具有抗癌、减肥、调节免疫等许多生理功能。文章主要研究亚油酸异构酶作用玉米油脂生产共轭亚油酸的条件,提高共轭亚油酸的生成量。通过试验确定其最适条件为:玉米油乳浊液浓度2%,40℃条件下反应,酶与其作用比例1:5,反应时间150min。CLA产量较高,达25.7μg·mL-1。
The corn fat includes the rich The linoleic acid may be transformed into the unsaturated fatty acid which is mainly linoleic acid and oleic acid. function matter-conjugated linoleic acid(CLA) by linoleic acid isomerase action. There are a lot of physiological functions in corn fat, such as anti-cancer, loses weight, adjustment immunity, and so on. The main objective here is to study the optimum produce condition of conjugated linoleic acid by linoleic acid isomerase response with corn fat to enhance the quantity of production of conjugated linoleic acid. The optimum conditions of linoleic acid isomerase response with corn fat were corn oil emulsion concentration for 2%, reaction at 40 ℃, enzyme and corn oil proportion for 1:5, reaction for 150 min. The quantity of production of conjugated linoleic acid was higher in this condition and achieved 25.7 ug·mL^-1.
