摘要 高压脉冲电场技术是一项新型的非热杀菌技术,不但具有良好的杀菌灭酶效果,而且最大限度地保持了食品的新鲜度,在某些应用领域可以替代传统的热加工技术。本文主要介绍高压脉冲电场在乳制品加工中的应用及其对乳中微生物和酶的作用效果。对于高压脉冲电场技术在乳和乳制品加工领域的商业化应用仍需进一步研究和探讨。 Pulsed electric field (PEF) processing is one of the non-thermal methods using short bursts of electricity to preserve foods, and it may be an alternative to traditional thermal processes in certain applications. This treatment could inactivate microorganisms and some enzymes while maintaining the freshness of food products. Dairy products have been most commonly used to study the effects of PEF on food quality, focusing on the effects of PEF on microorganisms and enzymes in food matrix. Further investigation is needed to commercialize PEF treatment for milk and dairy products processing.
