摘要
螺旋藻是一种古老的蓝藻,含蛋白质约55%-70%,还含有其它多种营养成分。本文研究了螺旋藻所含色素的稳定性,并采用维生素C及柠檬酸对它进行护色。结果表明,螺旋藻色素在避光和室内自然光下比较稳定,在直射光下褪色严重;在15-30℃之间,色素有较好的耐热性;柠檬酸、维生素C的最佳添加量分别为0.1%、0.05%。
Spirulina, a kind of ancient blue-green algae, contains protein about 55 -70 percent and many other kinds of nutrient. The stability of spirulina pigment was studied and the color of the solution was protected by adding citric acid and vitamin C. The result showed spirulina pigment was stable when it was stored without light or in natural light. And the color was faded in straight light. The pigment was heat-resistant between 15-30℃. The best parameters were 0.1% citric acid and 0.05% vitamin C.
