2007年深圳市生禽畜类食品重金属污染状况监测

Surveillance on Heavy Metal Contamination of Fowl and Livestock Products in Shenzhen in 2007

目的调查深圳市售生禽畜类食品中重金属的污染状况,为食品安全提供依据。方法从深圳市各监测点(农贸市场或超级市场)随机抽取生禽畜类食品179份,按照国家标准对铅、镉、无机砷、铬进行检测。结果在生畜类食品中存在铅、镉、无机砷、铬四种重金属污染,超标率为46.88%;在生禽类食品中只检出铅超标,超标率为1.74%;在生畜类食品中各种重金属超标率从高到低依次为铬、铅、镉、无机砷。结论目前深圳市场上销售的生禽畜类食品重金属污染状况不容乐观,特别是生畜类食品,铅、镉超标率高于全国污染监测水平;同时在四种重金属污染中,以铬污染最为严重,应引起相关部门足够重视。

Objective To investigate the heavy metal contamination condition of fowl and livestock products sold in the markets of Shenzhen City, and to provide the basis for food safety. Methods Totally 179 fowl and livestock products sold in the farm produce markets or supermarkets were randomly collected from the monitoring points in Shenzhen City and were detected the contents of lead, cadmium, inorganic arsenic and chromium by using the national standard method. Results Four heavy metal contamination including lead, cadmium, inorganic arsenic, and chromium contamination were found in the livestock products and the exceeded standard rate was 46.88%. Only the lead contamination was found in the fowl products, with the exceeded standard rate of 1.74 %. The descending order of exceeded standard rate of heavy metal contamination in livestock flesh products was chromium, lead, cadmium, and inorganic arsenic. Conclusions So far, the heavy metal contamination condition of fowl and livestock products sold in the markets of Shenzhen City is not optimistic, especially livestock products, of which the content of lead and cadmium is higher than the national monitoring contamination level. Meanwhile, chromium contamination is more serious than lead, cadmium and inorganic arsenic contamination, to which related departments should arouse sufficient attention.
