摘要
对甜杏仁的有效成份进行了分析并对其多糖的抗氧化性进行了研究,结果表明甜杏仁中脂肪、黄酮、多糖、蛋白质量分数分别为:46.53%、0.04%、1.73%、31%;抗氧化性研究表明0.2 g.L-1多糖液与同质量浓度Vc对羟自由基的清除相当,且对羟自由基.OH的抑制率随着质量浓度的增加而增强,质量浓度达到1.5 g.L-1时,清除率可达到88.8%。多糖液对超氧阴离子O2-.有很强的清除作用。
The contents of the sweet almond were analized. The property of anti - oxidition of polysaccharides was studied. The result shows:The content of fat,flavonoids, polysaccharides and protein was 46.53% ,0.04% , 1. 73% ,31% respectively. 0.2g· L^-1 polysaccharide solution was amount to the same concertration of Vc in scavenging to · OH. The scavengeng to · OH was 88.8% ,when concertration of polysaccharides was 1.5g ·L^-1. Poly- saccharide has strongly inhibition to O2^-· .
