Determination of anthocyanin in Granoir grape and wine with HPLC

摘要 利用甲醇和超声波提取酿酒葡萄‘Granoir’中的花色素苷,利用高效液相色谱分别测定了该葡萄及酒中的花色素苷。在测得的9种花色素苷中,均以二甲花翠素3-O-葡萄糖苷含量最高,分别占总成分的39.71%和69.55%,其次为二甲花翠素3-O-(6-O-对香豆酰)葡萄糖苷,构成了Granoir葡萄及葡萄酒中的主要呈色成分。 Anthocyanin in 'Granoir' grape was extracted with methanol and ultrasonic, and the an- thocyanin in ' Granoir' grape and ' Granoir' wine was detected with HPLC. Among the 9 anthocya- nins, the content of malvidin 3 - O - glucoside was the highest in ' Granoir' grape and wine, and the respective contents were 39.71% and 69.55 % maryl) glucoside.
