驴肉蛋白质氨基酸组成特点及与其他畜禽肉的分析比较 被引量:9

摘要 采用氨基酸自动分析仪测定驴肉的氨基酸组成,比较分析了驴肉与其他畜禽肉蛋白质的营养价值与氨基酸组成特点。结果表明,驴肉蛋白质含量高,必需氨基酸丰富,其氨基酸总量为驴肉总量的23.5%,其中赖氨酸为9.0%,必需氨基酸占总氨基酸的比例高达39.4%。驴肉蛋白质的营养价值和必需氨基酸,尤其赖氨酸明显高于羊肉、猪肉、牛肉和鸡肉,能为人类提供丰富的优质动物性蛋白资源。 Amino acid composition assay was carried out on automatic amino acid analyzer, and this paper compares and analyzes the protein nutritive value fortified and amino acid composition of donkey meat and other livestock and poultry meat. The results show that protein content of donkey meat is high, the essential amino acids are rich, and its total amino acid content is 23.5%, the lysine is 9.0%, the essential amino acids occupy the total amino acid as high as 39.4%. The protein nutritive value fortified and the essential amino acids of donkey meat, especially the lysine are higher than mutton, pork, beef and chicken. Donkey meat may provide rich and high quality resources of animal protein.
