摘要
从脱脂米糠中提取的膳食纤维经不同强度的超微粉碎后,得到不同粒径的超微粉体。实验结果表明,超微粉碎对纤维素含量几乎没有影响,但可以使部分半纤维素转化为水溶物。随着粒径的不断减小,膳食纤维的持水力、持油力、膨胀力在一定粒径范围内均有显著提高,而阳离子交换能力先增加,后降低。
After treatment of super micro-grinding, dietary fiber prepared from defatted rice bran were pulverized to different microsizes. The results demonstrated that with a stable range of cellulose, more and more hemi-celluloses were changed into soluble matter. As the particle size reduced, its water-holding capacity, oil-holding capacity and swelling capacity were increased significantly, while cation exchange capacity was increased first and then decreased.
