摘要
以苹果皮渣中提取的膳食纤维、脱脂奶粉、葡萄糖、植脂末、蔗糖酯为原料制成奶片。通过单因素实验、正交实验和感官评定的方法确定了奶片的最佳产品配方,测定了产品的各项理化指标,探讨了制备过程中遇到的问题。结果表明:奶片的最佳产品配方为膳食纤维含量10%、植脂末含量15%、葡萄糖含量15%、蔗糖酯含量7.7%。每片水分含量10.5mg、灰分含量71.4mg、蛋白质含量126.7mg、脂肪含量15.4mg、膳食纤维素含量68.6mg、钙含量4.2mg。
The dietary fiber extracted from apple pomace, dried skimmed milk, glucose, lube, sucrose ester were used as the ingredients to prepare milk tablet, The optimal recipe was gained through sensory evaluation with the single factor and orthogonal experiment. The physics and chemistry indicators of product were determined and the problems encountered during preparation were discussed. The results showed that the best formula of milk tablets was dietary fiber 10% ,lube 15% ,glucose 15%, sucrose polyester 7.7%. A piece of milk tablet which weight was 0.7g contain water content 10.5mg, ash content 71.4mg, protein content 126.7mg, fit content 15.4mg, dietary fiber 68.6mg,Ga content 4.2mg.
